Waterkloof “Circumstance” Cabernet Sauvignon 2017: Stellenbosch, South Africa
Grapes: Cabernet Sauvignon
Region/History Notes: South Africa has a longer wine-growing history than anywhere else in the New World, but it has only been in the last few decades that they have been known for premium dry wines. Cabernet Sauvignon grows extremely well in the climate and specific soils of Stellenbosch. Here producers are also leading the world in how winemakers approach sustainability.
Tasting Notes: Rich currants and black cherry on the nose but distinct notes of green pepper, tobacco, campfire smoke, and espresso are also layered in. The balance is perfect and it’s approachable even without food or decanting- what a deal! Pair with kielbasa sausage, cream sauce ravioli, brown butter gnocchi, or Dubliner cheese & dates.
