Region/History Notes: Raventós i Blanc is up there with my all-time favorite Spanish producers. They just work with indigenous Spanish grapes, not chardonnay like a lot of other Spanish sparkling wine producers, they are 100% organic, biodynamic, natural producers who focus on making the purest and most authentic wines possible while also preserving the environment. They only work with estate fruit, so their wines are smaller production and phenomenal. While their wines match up to the standards of true Champagne, they are a fraction of the price!
Tasting Notes: Lemon, lemongrass, lemon bars, lemon verbena, all the lemons! Along with green apples, pear, underripe apricot, and an intense minerality. Pair with fried oysters, fried chicken, sushi, and even specialty ramen soups- just go with something a little on the salty side.
