Pet Nat (short for Pétillant Naturel) is a style of sparkling wine that undergoes only 1 fermentation instead of the typical 2. Check out my YouTube video on the process for more info. But he takes it one step forward with this and ages the wine for 3 weeks with beer hops before bottling where it finishes fermenting in the bottle and is sealed with a beer cap.
